The thymbra capitata is a thyme shrub that grows near the sea, on the sandy dunes. With this wine Valle dell’Acate estate confirms its dedication to enological research, to produce white wines with pure style and strong character. Valle dell’Acate catalog includes Insolia e Grillo with Bellifolli and Zagra labels, and successful wines of non-autochthon wines such as Chardonnay Bidis and Vermentino Thymbra. Thanks to the white soil characteristics, the wind and the sea proximity, these grapes acquire a Sicilian DNA. The vineyard is located in a small area of the Biddine Soprana upland, at 250 meters above the sea level. The soil is calcareous, poor but with good deepness that makes the plants suffer, bringing back their vigor, therefore the fruits concentrate and, thanks to the ventilation, do not ripen completely.

The wine produced is Thymbra: a complex and intense white wine, but delicate, refined in steel for four months and in bottle for three months. The color is a shining straw-yellow, with golden and green ventures, a rich fragrance, with good sapidity and persistence. It releases in the end a pleasant note of vanilla that mixes with the delicate and persistent fruity flavors.
