The chicken wings with a citric sauce are perfect for the Cerasuolo di Vittoria DOCG wine, where the fragrance of Frappato adds lightness to a crisp dish, while the suppleness of the Nero d’Avola rounds the chicken. The wine and the dish truly complete one another.
Ingredients for 4 persons
16 chicken wings
parsley
1 garlic cloves
extra-virgin olive oil
salt and pepper
2 lemons
oregano
wild fennel
1 hot pepper
1 tablespoon of balsamic vinegar
Prepare the chicken wings, eliminating the tips. Put the wings in a casserole dish of a certain depth. Add the lemon and orange juice, the garlic clove, the salt and the pepper. Let the wings marinate for approximately an hour. In the meantime, prepare a mixture of the herbs, adding the olive oil and vinegar. Heat the oven to a temperature of 400° Fahrenheit. Remove the wings from the marinade and add them to the sauce previously prepared. Adjust for salt and pepper. Pour the mixture into a sauce boat. Place the chicken wings on the oven grill and cook them for approximately 20 minutes until they become golden in color and the skin becomes crunchy. Serve immediately together with the sauce.
